The BLT has one flaw: the tomato slides out on the second bite. Chopped, that problem disappears, and the bacon gets into every mouthful. Seed the tomatoes so the filling stays creamy, not soupy. Fully cooked bacon from the package keeps this inside the no-cook rule.

The lineup

  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • 1 small romaine heart, shredded
  • 2 plum tomatoes, seeded and diced
  • 4 slices fully cooked bacon, rough chopped
  • Salt and plenty of black pepper
  • 2 soft rolls, split

The chop

  1. Whisk the mayonnaise and lemon juice in the bottom of the bowl.
  2. Add the lettuce, tomatoes and bacon.
  3. Toss until everything is coated.
  4. Taste, then add salt and pepper until it tastes right to you. Go heavy on the pepper.
  5. Pack into the rolls and eat right away.

The extras

Dodge the Carbs

Skip the roll: spoon it into large iceberg or butter lettuce leaves.

Beef It Up

Add 3 oz of chopped deli turkey or 1 chopped hard-boiled egg.

Future You

Chop the bacon and seed the tomatoes a day ahead. Shred the lettuce and dress it at the last minute.

Show Off

Add a diced avocado and call it a BLAT.

Flavor Bomb

Stir 1 tsp of 'nduja into the mayonnaise, use pickled tomatoes in winter, or swap the mayonnaise for Garlic Aioli.

Heat Dial

Mild: as written. Warm: Chipotle-Lime Mayo in place of plain. Hot: add pickled jalapenos and a drizzle of Hot Honey over the bacon.

Psst

Package bacon gets crisper after 20 seconds in a microwave, if you have one handy. It is fine without.
