Invented from leftovers at midnight. Still the best idea anyone had that day.

The Cobb is a full meal pretending to be a salad: chicken, bacon, egg, avocado, tomato and blue cheese over crisp lettuce, with a sharp vinaigrette to cut through all that richness. Traditionally everything is laid out in neat rows. Do that for the photo, then toss it, because it eats better mixed.
The lineup
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 romaine hearts, chopped
- 1 rotisserie chicken, meat pulled from the bone and diced (about 4 cups)
- 6 slices fully cooked bacon, chopped
- 4 peeled hard-boiled eggs, diced
- 2 plum tomatoes, diced
- 2 ripe avocados, diced
- 2 oz blue cheese, crumbled
- Salt and pepper
The chop
- Whisk the oil, vinegar, mustard and Worcestershire in the bottom of the bowl with a pinch of salt and pepper.
- Add the romaine and toss until coated.
- Arrange the chicken, bacon, eggs, tomatoes, avocados and blue cheese in rows across the top.
- Admire it. Then toss everything together.
- Taste, then add salt and pepper until it tastes right to you.
The extras
Dodge the Carbs
Already there. This is one of the best low-carb meals in the book.
Future You
Dice the chicken, bacon and eggs up to 2 days ahead. Cut the avocado and dress the lettuce at the last minute.
Show Off
Swap the vinaigrette for the blue cheese dressing from The Wedge.
Flavor Bomb
Swap the chicken for 1 lb of cooked shrimp, add a few chopped pickled tomatoes, or use Chipotle-Lime Mayo thinned with lime as the dressing.
Heat Dial
Mild: as written. Warm: a pinch of cayenne in the vinaigrette. Hot: toss the chicken in 2 tbsp of buffalo sauce first.
