Classic deli coleslaw: creamy, a little sweet, a little sharp, with celery seed for that unmistakable deli flavor. A bag of slaw mix means no half cabbage haunting the fridge. Give it ten minutes to sit and the cabbage softens just enough.

The lineup

  • 1/3 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp celery seed
  • 1/4 tsp salt
  • 1 bag (14 oz) coleslaw mix
  • 2 scallions, sliced thin
  • Black pepper

The chop

  1. Whisk the mayonnaise, vinegar, sugar, mustard, celery seed and salt in the bottom of the bowl.
  2. Add the coleslaw mix and scallions. Toss until everything is coated.
  3. Let it sit 10 minutes, then toss again.
  4. Taste, then add salt, pepper and vinegar until it tastes right to you.

The extras

Dodge the Carbs

Swap the sugar for a sugar-free sweetener, or leave it out.

Beef It Up

It is a side. Pile it onto the BBQ Chicken Chop or any sandwich in Chapter 1.

Future You

Keeps 3 days in the fridge. It gets wetter as it sits; drain it a little before serving.

Show Off

Add a diced apple and a handful of chopped parsley.

Flavor Bomb

Stir in 1 tbsp of prepared horseradish or 2 tbsp of dill relish, or swap the dressing for Yum Yum Sauce for a hibachi-style slaw.

Heat Dial

Mild: as written. Warm: 1 tsp of sriracha in the dressing. Hot: a minced jalapeno and Spicy Mayo in place of plain.
