Temaki, or hand rolls, are the casual home style of sushi in Japan: a piece of nori in your palm, a little rice, a few fillings, rolled into a cone and eaten right away. There is no mat, no slicing and no way to do it wrong. Set everything out and let each person build. It is the best dinner-party recipe in this book.
The lineup
- 4 cups cooked rice, seasoned with a double batch of the sushi rice seasoning
- 1 package (10 sheets) nori, each sheet cut in half
- 1 package (8 oz) imitation crab, shredded, mixed with 1 tbsp mayonnaise
- 2 cans (5 oz each) tuna, drained, mixed with 2 tbsp mayonnaise and 2 tsp sriracha
- 1 package (4 oz) smoked salmon, cut into strips
- 2 Persian cucumbers, cut into sticks
- 1 carrot, cut into matchsticks
- 1 ripe avocado, sliced
- 2 scallions, cut into 3 inch lengths and slivered
- Sesame seeds and soy sauce, for serving
The chop
- Season the rice. Set it out with all the fillings, each in its own pile on the board or on plates.
- Hold a half sheet of nori in your palm, shiny side down.
- Press a thin layer of rice, about 2 tbsp, over the left third of the nori.
- Lay two or three fillings diagonally across the rice, pointing toward the top corner.
- Fold the bottom left corner up and over the fillings, then keep rolling into a cone.
- Dip in soy sauce and eat right away, while the nori is still crisp.
The extras
Dodge the Carbs
Skip the rice and use more fillings, or wrap everything in butter lettuce leaves in place of nori and rice.
Beef It Up
Add a bag (6 oz) of cooked salad shrimp or strips of leftover cooked steak or chicken.
Future You
Make the crab and tuna mixes and cut the vegetables up to a day ahead. Nori goes soft in minutes, so roll only what you are about to eat.
Show Off
Add mango sticks, cream cheese, pickled ginger and wasabi to the spread.
Flavor Bomb
Put out a sauce bar: Yum Yum Sauce, Spicy Mayo, chili crisp, eel sauce, and a tin of smoked sprats.
Heat Dial
This one is built for it. Everyone sauces their own roll: Yum Yum for mild, Spicy Mayo for warm, chili crisp and wasabi for hot.
Psst
Wet your fingers before handling the rice and it will not stick to you. Butter Knife cooks can build their own rolls; the cutting is the adult's job.
